Lemon and Granadilla Yoghurt Treats (Gluten-free)

Delightful smooth and lemony Good Food Diet desserts, topped with exotic granadilla.

These cool, tangy yoghurt desserts are super refreshing. Perfect to end, or even start, a summer meal. With their seductively sweet-tart flavour they also deserve a place on Indian, Oriental, Greek and Middle Eastern menus.


Purple passion

Passion fruit and granadilla are two names for the same tropical fruit, native to Brazil. Other than the name suggests, the fruit does not possess any hidden passion powers. Centuries ago, Spanish missionaries in South America saw a resemblance between parts of the plant's exotic-looking, intricate flower and the symbols of the Passion (crucifixion/suffering) of Christ, such as the crown of thorns, the wounds, the cross and the nails. They called it the passion flower, hence the name passion fruit. Granadilla, on the other hand, is derived from the Spanish for pomegranate, namely granada.


These Lemon and Granadilla Yoghurt Treats are:

  • Heart-friendly
  • Vegetarian-friendly
  • Wheat-free (if thickener used in granadilla pulp is wheat-free)
  • Gluten-free (if thickener used in granadilla pulp is gluten-free)
  • Egg-free


HOW TO MAKE LEMON AND GRANADILLA YOGHURT TREATS

  • 1 x 80 g packet lemon jelly
  • 250 ml (1 cup) boiling water
  • 30 ml (2 tbsp) white sugar
  • 10 ml (2 tsp) lemon juice
  • 1 x 500 g tub (2 cups) low-fat plain yoghurt
  • 2 x 110 g or 115 g cans granadilla pulp


Method

Step 1: Dissolve the jelly in the boiling water. Add the sugar and lemon juice. Stir very well. Allow to cool for 20 minutes at room temperature.

Step 2: Add the yoghurt and mix very well until smooth. (I use a wire whisk.) Pour into eight small dessert bowls, small cups or glasses. Leave in fridge until set. This will just take an hour or two.

Step 3: Spoon the granadilla pulp over the top and serve. These desserts kan be kept in the fridge for a few days.

Makes 750 ml (3 cups) or 8 servings
